Baked Cashew Chicken


  • 1 bag cauliflower rice
  • 1 yellow onion, minced
  • 2 medium peppers, chopped
  • 4 boneless skinless chicken breasts, diced
  • 1 cup hoisin sauce
  • 2 tbsp minced garlic
  • 4 tbsp soy sauce
  • 1 tbsp ginger, minced
  • 1 cup cashews
  • 1/4 cup green onions


  1. Preheat oven to 375ºF
  2. Cook cauliflower rice according to package, then set aside.
  3. Lightly grease baking dish, then add cauliflower rice to bottom. Top with onion, pepper, and chicken.
  4. In a separate bowl, whisk together hoisin sauce, soy sauce, garlic, and ginger. Pour sauce over the chicken and vegetables.
  5. Bake for 30 minutes. Add cashews on top and bake for another 5-10 minutes.
  6. Remove from oven, garnish with green onions, then serve immediately.
